  • Fresh altitude terroir on sandstone bedrock, the plot “Les Gravettes” is dotted with small “graves” suitable for white wine.

  • Vines worked with our three draft horses: Rustica, Colette and Carolus     
  • Harvest by hand in small 34 l perforated boxes and cooling of the harvest by dry ice
  • Natural fermentation in indigenous yeasts of the plot with production of a “pied de cuve” (starter yeast culture)  
  • Aging for 6 months, 25% in French oak barrels (including 10% new oak) and 75% in stainless steel tanks.
  • Sulphite content: 100mg / l (maximum standard in organic farming 150mg / l, 200mg / l in conventional)
  • 13.5% alcohol
  • Lemon buttered wine with notes of pear and citrus on the palate     
  • To taste with roasted scallops, semi-cooked tuna or chicken curry
  • Terroir fresh from altitude on mother rock of sandstone sometimes outcropping, plots bordered by large hundred-year-old white oaks.
  • Blend of Mauzac (75%) and Chardonnay (25%)

  • Direct pressing and natural fermentation in stainless steel tank with indigenous yeasts (with the creation of a preliminary vat for each plot).    
  • Separate vinification of Mauzac and Chardonnay then blending.     
  • Aging for 6 months in stainless steel tanks.
